I'm thinking about getting the Razr but the Motorola UI on the phone is making reconsider it. Is there any way to remove the UI skin and just have the stock version of Android running on it (or should I go with a Galaxy Nexus)?

Also for those who are owners of this device, what are your opinions on it? Is it worth getting it? (I'm currently an iPhone 4 user)

Well, I've don't own the Razr, but I've tested it several times in store... I liked the UI at first, but the more I've used it, the less I like it. It just doesn't seem as smooth/intuitive as Touchwiz or some others.

Galaxy Nexus will obviously have the stock version and the most up to date version, but if you don't mind a little tinkering, you can probably get a Razr to have stock ICS on it. I'm just not sure if they've cracked the locked bootloader yet. It will come I'm sure, but the version will always be behind.

If you don't like the interface you can just go to the Market and download a new launcher like ADW EX or SPB Shell or even Launcher 7 which turns your phone into a WP7
